I spent Christmas day making up a few new recipes, which turned out well enough that a few are shareable. This one is based off some recipes from the Ben & Jerry’s Ice Cream Book (but my own adaptation, so I can share :))
3/4 lbs raspberries
1 1/2 cup sugar
1/2 cup lemon juice
1/4 cup corn syrup (I didn’t have any, so I used a homemade simple syrup)
1 cup cold water
3 Tablespoons Tequila
– mix raspberries, sugar, and lemon juice. Chill in fridge for at least 1 hour.
– (I didn’t do this, but wish I had) blend raspberry mixture until smooth
– add corn syrup, water, and Tequila
– pour mixture into ice cream maker (can pour into container and put in freezer for firmer texture)
It didn’t freeze as much as I would have liked it to. I’m pretty sure more water or less Tequila would have been perfect. Still overall it was pretty good.
